Grilled Potato & Sweet Onion Salad. Fall in Love with Potatoes in a Completely New…HEALTHY Way!
Instructions
- Boil Potatoes:
- Scrub the potatoes clean
- Place the Whole Potatoes in a large pot
- Cover the potatoes with cold water (Starting the potatoes in cold water helps them cook more evenly)
- Bring the pot to a boil
- Once boiling, reduce the heat to a simmer (No Lid Needed)
- Check the potatoes after 10 minutes (should not take longer than 20 min)
*The potatoes are done when they are tender all the way through. You can test this by poking the potato with a fork, paring knife, or skewer. If the utensil slides easily all the way to the center, the potatoes are done. - Drain the potatoes and Run Under Cold water cool them down (Let Cool Completely)
- Slice Cooled Potatoes in half or 1” Think Chunks
- Slice Whole Vidalia Onions in ½” Rings
- Turn Grill on Medium High
In a Bowl: - Add Spicy Chicks Gourmet Roasted Garlic & Herb Olive Oil Blend Seasoning Mix
- Add ¼ cup of HOT Water to Seasoning Mix
- Let Sit for 5 minutes (This will Hydrate the Seasonings)
- Stir in 1 cup of Olive Oil
- Drizzle the Potatoes & Onions with a little bit of the Seasoned Oil
*Want to make sure the Potatoes are Cooled as Warm Potatoes will Soak Up too much Olive Oil - Grill the Potatoes & Onions
- Potatoes are Already Cooked; we are looking for Grill Marks to make a pretty presentation
- Onions need to be grilled 5-8 minutes per side - Toss the Grilled Potatoes & Onions with about ½ a cup of the Seasoned Olive Oil
- More Olive Oil can be added, if you need
- Store any Remaining Seasoned Olive Oil in the Fridge for up to 3 months - Sprinkle some Chopped Parsley to Jazz Up the Presentation - *Optional
