Summer in a Bowl! This refreshing Chopped Greek Salad will make you feel like you’re on the Mediterranean Coast.

Ingredients

  • 2 pints Cherry Tomatoes
  • 1 English Cucumber
  • ¼ of a Red Onion
  • 8 oz Crumbled Feta Cheese or Vegan Cheese
  • 1 jar of Kalamata Olives
  • 12 Pickled Pepperoncini Peppers
  • 1 Tablespoon Dijon Mustard
  • ¼ cup Red Wine Vinegar
  • ½ tsp Salt
  • ½ tsp Sugar
  • ½ cup Pure Olive Oil (*Note Extra Virgin, Need a Neutral Flavored Oil)
  • 1 Tablespoon Spicy Chicks Gourmet Greek Olive Oil Blend Seasoning Mix

Instructions

  1. Cut the Tomatoes in half
  2. Dice the Cucumber
  3. Thinly Slice the Red Onion
  4. Add All of the Above to a Mixing Bowl
  5. Toss in the Feta Cheese or Vegan Cheese
  6. Drain the liquid from the jar of Olives
  7. Add the Olives to the Mixing Bowl
    For the Greek Salad Dressing:
  8. In a Small Mason Jar Add All the Ingredients Below:
    - 1 Tablespoon Dijon Mustard
    -¼ cup Red Wine Vinegar
    -½ tsp Salt
    -½ tsp Sugar
    -½ cup Pure Olive Oil (*Note Extra Virgin, Need a Neutral Flavored Oil)
    -1 Tablespoon Spicy Chicks Gourmet Greek Olive Oil Blend Seasoning Mix
    * Note the Bag of Spicy Chicks Gourmet Seasoning Mix will Make 3-4 Jars of Greek Salad Dressing 😊! Store any extra dressing the Refrigerator.
  9. Screw the Lid on the Mason Jar
  10. Shake well
  11. Pour Over Chopped Salad in Mixing Bowl
  12. Toss Veggies, in bowl, to Coat
  13. Divide Among 4 Salad Bowls
  14. Add 3 Pepperoncini Peppers to Each Bowl
  15. Serve & Enjoy!
    * Any Leftover Salad will Stay in the Refrigerator for 2 days.
