Grilled Potato & Sweet Onion Salad. Fall in Love with Potatoes in a Completely New…HEALTHY Way!

Ingredients

Instructions

  1. Boil Potatoes:
  2. Scrub the potatoes clean
  3. Place the Whole Potatoes in a large pot
  4. Cover the potatoes with cold water (Starting the potatoes in cold water helps them cook more evenly)
  5. Bring the pot to a boil
  6. Once boiling, reduce the heat to a simmer (No Lid Needed)
  7. Check the potatoes after 10 minutes (should not take longer than 20 min)
    *The potatoes are done when they are tender all the way through. You can test this by poking the potato with a fork, paring knife, or skewer. If the utensil slides easily all the way to the center, the potatoes are done.
  8. Drain the potatoes and Run Under Cold water cool them down (Let Cool Completely)
  9. Slice Cooled Potatoes in half or 1” Think Chunks
  10. Slice Whole Vidalia Onions in ½” Rings
  11. Turn Grill on Medium High
    In a Bowl:
  12. Add Spicy Chicks Gourmet Roasted Garlic & Herb Olive Oil Blend Seasoning Mix
  13. Add ¼ cup of HOT Water to Seasoning Mix
  14. Let Sit for 5 minutes (This will Hydrate the Seasonings)
  15. Stir in 1 cup of Olive Oil
  16. Drizzle the Potatoes & Onions with a little bit of the Seasoned Oil
    *Want to make sure the Potatoes are Cooled as Warm Potatoes will Soak Up too much Olive Oil
  17. Grill the Potatoes & Onions
    - Potatoes are Already Cooked; we are looking for Grill Marks to make a pretty presentation
    - Onions need to be grilled 5-8 minutes per side
  18. Toss the Grilled Potatoes & Onions with about ½ a cup of the Seasoned Olive Oil
    - More Olive Oil can be added, if you need
    - Store any Remaining Seasoned Olive Oil in the Fridge for up to 3 months
  19. Sprinkle some Chopped Parsley to Jazz Up the Presentation - *Optional
  20. Serve & Enjoy!
